Red shifts occur when you view something moving away from you at high speeds. The faster the object (in the case of the discussion, stars) are moving, the more toward the red spectrum their visible light is shifted. This is due to the net speed at which the light is traveling. Since the light begins travel at the uniform speed it travels in a vacuum (~186,000 mi/sec...a.k.a. 'light speed') the increasing distance of the source of that light causes the wavelength of the light to appear shifted toward the red end of the spectrum.
There's a similar phenomenon known as blue shift caused by something moving toward the observer at high speeds.
